Casseroles and Main Dishes 
















Broccoli and Rice Casserole
 
1 small onion -- chopped
1/4 cup margarine
2 cups quick cooking rice
2 cups water
1 -- 10 can of cream of mushroom soup
1/2 tsp salt
1/2 cup cheez whiz
1 -- 10 oz package of broccoli, partially thawed
 
Combine all ingredients.  Mix thoroughly and cover.  Cook in greased and covered casserole dish.  Bake at 325 degrees for 1 hour.  (Uncover the last 15 minutes to brown.)
*Note:  If you use regular rice, cook it before adding it to the other ingredients. 
Rice Hot Dish
 
1/2 cup wild rice
1/2 cup white rice
3 1/2 cups boiling water
1 pound ground beaf
1 can cream of mushroom soup
3 oz. of soy sauce
2 onions
2 cups diced celery
1 T. brown sugar
 
Pour boiling water over the rice and let stand for 1/2 hour.  Brown and crumble the ground beef.  Add onions, celery, cream of mushroom soup, brown sugar and soy sauce.  Bake for 1 1/2 hours at 350 degrees.  If needed, water may be added during baking.  Sprinkle chow mein noodles on top during last 1/2 hour.
