Genuine Lumberjack Pancakes
 
1 cup flour
1 T. sugar
3 tsp. baking powder
2 eggs
1 T. oil
1 cup to 1 1/2 cups milk
Mix dry ingredients.  Add eggs, oil and milk.  Fry on a griddle at 400 degrees. 
Serve with homemade rhubarb-strawberry or rhubarb-cherry perserves or maple syrup.
 
This recipe comes from a lady  who cooked in a Minnesota logging camp for 3 years, starting back in 1951.  The recipe has been reduced from the lumberjack camp portions to a normal family breakfast amount.  The amount of milk can be adjusted depending on how thick you like your pancakes.
Brunch Casserole (Egg Bake)
Prepare the night before...
4 cups of cubed day old french bread
2 cups shredded medium cheese
10 eggs, slightly beaten
4 cups milk
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. onion powder
dash of fresh ground pepper
 
Optional:
8-10 slices of bacon, crumbled
1/2 cup sliced mushrooms
1/2 cup chopped, peeled tomatoes
 
Generously butter a 9" x 13" baking dish.  Arrange bread cubes in dish and sprinkle with cheese.  Beat together next five ingredients and pepper to taste.  Pour evenly over cheese and bread.  Sprinkle with bacon, etc., if desired.  Chill overnight.  Bake uncovered.  Bake at 325 for 1 hour.
Tortilla Roll-Ups
Filling:
1 package (8 oz.) cream cheese
1/2 package Hidden Valley Ranch salad dressing mix
1/4 to 1/2 cup cheddar cheese; grated
chopped onions to taste
1 small can of chopped green chile peppers or jalapenos
 
Mix the above ingredients together.  Spread onto flour tortillas, roll and slice.
*You can also add to the filling:  grated carrots, chopped celery and/or cucumbers.
Chocolate Turtles
1/2 lb of soft carmels
2 tablespoons of heavy cream
1 cup of pecan halves
2 squares of semi-sweet chocolate
 
Melt the carmels and the cream over hot water.  Cool about 10 minutes.  Place the pecans on wax paper in groups of three.  One for the head and two for the legs.  Spoon the carmel mixture over the pecans, leaving three tips showing.  Let stand until set, about 30 minutes.  Partially melt chocolate over hot water.  Remove from water and stir until melted.  Cool.  Spread over carmels.  Let stand until set.
Citrus Punch
1 -- 12 oz. can each of:
  Five Alive Citrus Beverage
  Five Alive Berry Citrus Beverage
  Lemonade (frozen)
 
*Use half of the required amount of water.
Add:  1 -- 2 liter bottle of 7-UP
This will fill a punch bowl.  Makes 24 -- 5 oz. glasses OR 20 -- 6 oz. glasses.
Quick & Easy Family Size Apple Crunch
5 pounds of apples
1 cup oatmeal
1 cup brown sugar
1 cup all purpose flour
1 tsp of pumpkin pie spice
1 stick of margarine
 
Peel, core and slice apples and put in an 8" x 13" pan.  In a bowl, add oatmeal, flour, brown sugar, spice and mix thoroughly.  Melt margarine and add to the dry mixture then sprinkle over the top of the apples.  Bake for 30 to 35 minutes at 375.
Party Punch
2 (46 oz.) cans of Hawaiin Punch
1 (12 oz.) can of  frozen lemonade (no water added)
1 (12 oz.) can of frozen orange juice (no water added)
2 (1 qt.) bottles of 7-Up
 
Get an extra can of Hawaiin Punch to freeze for the punch ring.
 
Multiply x 5 to make 165 (5 oz.) glasses:
     10 cans Hawaiin Punch (plus 1 for the punch ring)
     5 (12 oz.) cans of frozen lemonade (no water added)
     5 (12 oz.) cans of frozen OJ (no water added)
     10 qts. of 7-Up
